Encrypting a message hides what it says. It does not hide who is talking to whom, and that is often the more revealing fact.
Every network needs somebody to carry the traffic, and whoever carries it sees both ends. Onion routing does not look for a carrier who can be trusted. It splits the job so that no single carrier sees enough to matter.

Knows who you are. Does not know where you are going. Removes the first layer to reveal only the IP of Relay 2.
Middle Relay
Knows the relay before it and the relay after it. Nothing else. Sees no payload content, no sender, and no destination.
Exit Relay
Knows the destination. Does not know who asked. Removes the final layer of routing encryption and delivers the message.
